Pizza Toast

 

Pizza toast delivers the goodness of a pizza for a fraction of the effort and time.

Makes: 6

Ingredients:

  • 6 slices white bread
  • 1 tbsp. butter (approximately)
  • 2 tbsp. minced onion
  • 2 tbsp. cubed carrot
  • 2 tbsp. cubed bell pepper
  • 1 tbsp. oil
  • 1 garlic clove crushed
  • 1 small tin tomato paste
  • 1 tbsp. mixed dried herbs
  • 1 tuna can
  • 6 slices cheese

 

Instructions:

  1. Butter the bread slices on one side. Heat a pan and lightly toast the bread pieces buttered side down. No need to toast on two sides.  Set aside.
  2. Mince the onion and cube the carrot and bell pepper.
  3. Heat the oil in a sauce pan and add the onion, carrot and bell pepper. Cook until the onions become translucent. Remove from the sauce pan and set aside.
  4. In a small bowl combine the crushed garlic, tomato paste and dried herbs. Set aside.
  5. Preheat the oven to 200 degrees Celsius.
  6. Lay the bread slices on a clean plate buttered side down.
  7. Spread the tomato paste mixture evenly on top of every slice.
  8. Drain and flake the tuna can and divide into 6 equal portions.
  9. Place a tuna portion on every slice of bread.
  10. Place the slices of cheese on top of the tuna. (Instead of sliced cheese you can also use grated mozzarella or any other cheese you prefer. If you are using mozarella or any other grated cheese, you can add the cheese on top of the veggies too.)
  11. Divide the onion, carrot and bell pepper mixture into 6 portions and place the portions on top of the cheese on the bread slices.
  12. Arrange the bread slices on a baking tray.
  13. Bake for 15 minutes or until the cheese melts.
  14. Optionally sprinkle the toasts with sliced green chilli before serving.
