Oatmeal Kulhi Boakibaa

 

Using oatmeal instead of rice makes this kulhi boakibaa quick and easy to prepare. And you don't need to bake this in an oven, you can simply make it over the stove.

Ingredients:

  • 1 cup oats
  • 1 cup boiled potatoes
  • 1 can tuna
  • Juice of ½ a lime
  • 1 onion
  • 10 curry leaves
  • ½ githeyo mirus (scotch bonnet)
  • ¼ tsp turmeric
  • 1 tsp crushed ginger
  • 1 garlic clove crushed
  • Salt to taste
  • 1 tsp olive oil

 

Instructions:

  1. Prepare the oatmeal according to packet instructions (we used instant oats and soaked them in 1 cup boiling water)
  2. Slice the githeyo mirus and finely chop the onion and curry leaves
  3. Mix the sliced onions, githeyo mirus, lime juice, curry leaves, garlic, ginger and salt. Using your hand, squeeze the ingredients together thoroughly
  4. Add the tuna, boiled potatoes, turmeric, oats and mix well
  5. Taste the mixture and adjust salt if needed
  6. Heat a non-stick frying pan
  7. Pour the olive oil into the pan and by using some tissue paper, coat the pan evenly
  8. Place the mixture in the pan and smooth it using a spatula or back of a tablespoon. You might have to divide the mixture into portions depending on the size of your pan. As for the thickness of the mixture, a little over half and inch would be good.
  9. Switch the stove to low heat and cook until the top of the mixture becomes dry
  10. Using a spatula gently flip it
  11. Cook until the bottom is golden brown. You can check if the bottom is brown by gently lifting one side of the boakibaa a little bit by using your spatula
