Paan Boakibaa

 

We made some Paan Boakibaa and it turned out to be drop dead delicious. We didn’t add any additional sugar because the condensed milk made it sweet enough for us. But you can of course add some if you want to, but make sure you mix it well so that it’s all dissolved.

 

Makes: 9 pieces (7 inch square tray)

 

Ingredients:

  • 5 cups shredded white bread
  • 2 cups water
  • 2 eggs
  • 1 tsp. butter (softened)
  • 1 can condensed milk (we used Double Peach)
  • 1 tsp. vanilla essence
  • ¼ cup raisins
  • ¼ cup kanamadhu (sea almonds)

 

Instructions:

  1. Using your fingers shred the bread into crumbs. You don’t have to make it that fine, and you don’t have to remove the crust.
  2. Place the breadcrumbs in a large bowl and add the water. Rather than dumping the water in one spot, try sprinkling it so that the breadcrumbs get wet more evenly. Mix it a little using your fingers and set it aside to soak. Around 20 minutes will do.
  3. Preheat your oven to 175 degrees Celsius.
  4. Using a little bit of oil or butter, coat the insides of the tray you are going to use for baking and set it aside. We used a 7 inch by 7 inch square tray.
  5. In a bowl, beat the eggs. Then add the butter and condensed milk and beat again until everything is well combined.
  6. Then add the raisins, kanamadhu, and vanilla essence and mix it well.
  7. Now we are going to move on to the step of adding the breadcrumbs we left to soak. Before doing that, use your fingers to lightly squeeze the breadcrumbs.
  8. Finally, add the breadcrumbs to the egg mixture and make sure everything is evenly combined combined. 
  9. Pour the mixture into the baking tray you prepared and smoothen it out.
  10. Bake in the preheated oven until the top gets golden brown and when you insert a toothpick into the centre it comes off clean. For us it took 50 minutes. We kept it on the middle rack. It might be different depending on the oven you use.
