Barabo Pirini

 

Have you made anything from pumpkin that wasn’t nice? Anyway, here we have the recipe for a delicious pirini recipe made with pumpkin.

Ingredients:

  • 2 cups grated pumpkin
  • 4 cups water
  • 6 inches pandan leaf
  • 1 tin condensed milk
  • 3 inches cinnamon
  • 3 cardamom pods
  • 1 ½ tbsp. corn flour
  • 1/3 cup water (to dissolve corn flour)
  • 1 tsp. rosewater
  • Slivered almonds for decoration

 

Instructions:

  1. Grate the pumpkin.
  2. Add the water and pandan leaf to a large pot and bring to a boil.
  3. When the water starts boiling, lower the heat and add the grated pumpkin. Let the mixture simmer until the pumpkin is cooked. For us this took around 20 minutes.
  4. Then add the condensed milk, cinnamon & cardamom. Mix well and cook for another 10 minutes.
  5. Combine the corn flour with water in a small bowl and pour it into the pot. Mix well and cook until the mixture thickens. For us this took another 20 minutes.
  6. Add rose water and switch off the stove.
  7. Transfer the mixture to serving tray or bowl. Arrange almonds on top. Chill in the fridge before serving.
