Thyme's Valhomas Spaghetti

Two storeys, packed tight, plastic chairs, blue and white minimal decor; Thyme is a modest affair that presents zero fuss and great food. We at Lonumedhu have tasted their crispy chicken burger and their famous Addu reha and roshi. However, it's their valhomas spaghetti that grabbed most of our attention.

 

Adding valhomas to spaghetti; it is probably something we've all considered doing at one time or another, and some of us might have gone ahead and done it as well. For us, it was the first time tasting something of its sort, and yes, it was fantastic.

 

The spaghetti itself is cooked to the style of an aglio olio, although it contains much less oil. The dish does come with a lot of really good valhomas slices. The best bites we took were the ones that had slices of oven roasted tomatoes. Other great things about the dish include the olives and the sprinkling of parmigiano-reggiano. We especially love the inclusion of curry leaves. It really combines so well with the valhomas, and also makes the spaghetti feel really local.
