Masdhalhu Fried Rice

 

Here’s a quick, easy and budget friendly recipe for these uncertain times. Do swap the frozen veggies for any kind of veggies you have on hand and adjust the chillies to your liking. Also, if you have some leftover rice, use that instead of cooking rice from scratch; for this recipe you'll need 2 cups of cooked rice.

 

Serves: 2

 

Ingredients:

  • 2/3 cups uncooked rice
  • 1 & ½ cups water (to cook the rice)
  • ½ tsp. salt (or to taste)
  • 1/3 tsp. turmeric powder
  • 2 eggs
  • 2 tsp. oil (for the omelette)
  • ¼ tsp. salt (for the omelette)
  • 1 small onion
  • 2 garlic coves
  • ½ githeyo mirus (or to taste)
  • 1 tbsp. oil (for the fried rice)
  • ½ cup frozen veggies
  • 1 tuna can
  • 3 tsp. oyster sauce
  • ¼ lime

 

Instructions:

  1. Rinse the rice thoroughly. Then add the rice to a pot along with the water, salt and turmeric powder.
  2. Bring the mixture to a boil and then turn the heat down. Let it simmer until the rice is cooked. When the rice is cooked, set it aside.
  3. Heat the oil in a frying pan. While the oil is heating up, beat the eggs in a bowl along with the salt. Once the oil is hot, add the eggs and cook for around 2 to 3 minutes. You should have a nice omelette by now. Remove it from the pan, let it cool down a bit and then slice it into a quarter inch wide strips. Set it aside. Alternately, you can also skip the omelette bit and serve the fried rice with a fried egg like how it’s done in the picture. Also, if you are out of eggs, you can just skip it entirely.
  4. Slice the onion into ¼ inch slices. Mince the garlic. Slice the githeyo mirus thinly.
  5. Heat 1 tbsp. oil in a pot.
  6. Add the onion and githeyo mirus and cook on medium heat until the onions turn translucent and start taking on a brownish colour. Do keep stirring during this step.
  7. Add the garlic and cook for around half a minute while stirring.
  8. Add the frozen veggies. Do remember to defrost them before adding. Keep stirring and cook for around one and a half minutes. If you don’t have frozen veggies, just made do with whatever you have.
  9. Then add the tuna can and mix well. Do this a bit gently so that you don’t flake the tuna too much.
  10. Add in the cooked rice and mix again gently.
  11. Then add the sliced omelette and mix again too.
  12. Add in the oyster sauce and give it a good mix to coat the rice evenly. You can use soy sauce too if you don’t have oyster sauce.
  13. Squeeze in the lime and that’s it. Do have a taste and adjust the seasoning to your liking.
