Masala Chai

 

Masala Chai, the perfect drink for cosy days like today. What’s not to like about it? It’s spicy, sweet and so comforting.

 

Serves: 3 (in cups)

 

Ingredients:

  • 2 cup water
  • 1 inch piece of ginger sliced thinly
  • 3 inch piece of cinnamon
  • 12 cardamom pods
  • 6 black peppercorns
  • ¼ tsp. whole fennel seeds
  • 3 cloves
  • 3 tsp. loose black tea leaves
  • 1 cup milk
  • 7 tsp. sugar (or to taste)

 

Instructions:

  1. Place water, ginger, cinnamon, cardamom, black peppercorns, fennel seeds, and cloves in a large pot. Remember to open up the cardamom pods before you put them in.
  2. Bring the mixture to a boil and then let it simmer for 15 minutes.
  3. Remove from heat and add the tea leaves. Let it steep for 2 minutes.
  4. Add the milk and sugar. Give it a good stir. Also, if you are into sugar, you might have to add some more than we did.
  5. Place the pot back on top of the stove and on medium heat, let the mixture cook until it just begins to boil.
  6. Remove from heat and strain into mugs or cups.
