Custard

 

Raise your hand if this one is a childhood favourite. Yes, all the ingredients except for the water do come from tins and cans. But nevertheless, this local version of fruit custard is such a special treat we Maldivians have been enjoying on Eids and many other special occasions.

 

Serves: 3-4

 

Ingredients:

  • 2 cups water
  • 1 cup condensed milk
  • 3 tbsp. custard powder
  • 2/3 cup canned fruits

 

Instructions:

  1. Combine the water, condensed milk and custard powder in a pot. You can add a couple of tablespoons of sugar if you want too.
  2. Place the pot on the stove, and on medium heat, cook until the mixture begins to bubble a bit. Make sure it’s not sticking to the bottom of the pan by stirring occasionally.
  3. Once you see the bubbles forming, stir continuously and cook until the mixture really thickens and reduces by around half. It’ll take something like over 20 minutes.
  4. Switch off the heat and then stir in the canned fruits. You can reserve some to throw on top for decoration as well.
  5. Pour the mixture into your serving container and keep it in the fridge until serving time.
