Kaashi Pudding

 

Coconut based desserts are really our thing. We seriously do love our huni gulha and huni hakuru. For this week’s new recipe we have one of our coconut-based favourites, Kaashi pudding. It’s really simple to make as you can tell from the instructions below.

 

Ingredients:

  • 1 ½ cups grated coconut
  • 2 cups condensed milk
  • 2 tbsp. sugar
  • 1 tsp. vanilla essence
  • ¼ tsp. salt
  • 3 eggs
  • ½  tbsp. butter (for greasing)

 

 

Instructions:

  1. Preheat the oven at 180 degrees Celcius.
  2. Prepare a tray by coating it with butter. We used a 20 cm tray.
  3. In a bowl mix together the condensed milk and the grated coconut.
  4. Then add the sugar, vanilla essence, and the salt and mix again.
  5. Beat the eggs in a separate bowl and gently pour that into the coconut and condensed milk mixture.
  6. Mix everything together really, really well.
  7. Pour the mixture into the tray you prepared before.
  8. Place the tray inside the preheated oven, on the middle rack, and bake until a toothpick inserted into the centre comes off clean. For us it took around 20 minutes. But remember that different ovens cook differently. Also, do be a bit cautious, as this one tends to cook really quickly.
  9. When it’s done, let it cool down a bit. Then slice and serve.
