Date Bread

 

Bread doesn’t always have to be boring. This moist date bread works well by itself. But we suggest you try it with a cream cheese spread as well.

Ingredients:

  • 1 cup date
  • ½ cup butter
  • 1 cup flour
  • ½ cup brown sugar
  • 2 eggs
  • ½ tsp baking soda
  • 1 cup hot water
  • ½ tsp vanilla extract

 

Instructions:

  1. Preheat the oven at 220 C and and line the bottom and sides of a 8 inch bread tin with baking parchment.
  2. In a bowl mix together the dates, water and baking soda
  3. Set aside the mixture for 30 minutes
  4. Pit the dates, and using a spoon or your hand squash them to make a paste
  5. In a large bowl cream the sugar and the butter by either using an electric mixture or hand held whisk
  6. Add the eggs, flour, vanilla extract, dates and mix well
  7. Pour the mixture into the lined tin and bake for 20 minutes or until a wooden toothpick inserted into centre comes out clean
  8. Let the bread cool completely before slicing
