Chicken Tortilla Wrap

 

This is a deceptively simple recipe that you can use to impress people and look like a pro. All you have to do is boil some chicken, shred it, mix together a few ingredients, slice a few ingredients and just assemble; seriously it’s that simple. We’ve also included some pictures to make the assembling bit easier

Before we dig in further, we should let you know that for this recipe, we used Amexicana Flour Tortillas, provided to us by Pyramid, one of our partners. There are actually two sizes of Amexicana Flour Tortillas available at Pyramid, but for this recipe we are using the larger size. We can assure you that they do really taste great. Also, for those of you who don’t know where Pyramid is, it’s right in front of the STO Trade Centre.

 

Serves: 3

 

Ingredients:

  • 3 Amexicana Flour Tortillas
  • 250 grams skinless boneless chicken
  • 1 small onion
  • 1 small cucumber
  • 1 small tomato
  • 6 leaves of lettuce
  • 1 bell pepper
  • 1 ½ tsp. ground black pepper (or to taste)
  • 1 Thai chilli (or to taste)
  • 3 ½ tbsp. light mayonnaise (and a little more for drizzling)
  • ½ tsp. salt (or to taste)

 

Instructions:

  1. Cut the chicken into large cubes and place them in a pot, and pour in enough water to cover the chicken pieces.
  2. Boil the chicken until they are cooked; when cooked they should be white and when you cut into them, the insides should not be pink.
  3. While the chicken is boiling, cut your onion into rings, peel and slice the cucumber, slice the tomato, chop the Thai chillies, and cut the bell pepper into thin strips.
  4. When the chicken is cooked, either by using two forks or a knife shred the chicken.
  5. Mix the chicken with black pepper, salt, thai chillies and mayonnaise. If you want to have a taste and adjust the seasoning, this will be that time.
  6. Heat a pan and cook the tortillas; it doesn’t take long, 30-45 seconds each side should do. When they are cooked they'll resemble a well cooked roshi.
  7. Place a tortilla on a large plate and at one end of the tortilla, place 2 lettuce leaves and top it with 4 tsp. of the chicken mixture (if you want to put more, feel free to do so).
  8. If your mayonnaise is in a squeeze bottle, draw a line of mayonnaise vertically over the chicken and if your mayonnaise is in a jar, just spoon a little bit over the chicken so that it forms a line. It doesn’t have to be neat.
  9. Now place 3 tomato slices, and on top of the tomatoes, place 3 cucumber slices and over it goes a few onion rings. On top of it goes the bell peppers. Then drizzle some mayonnaise over it. If all of this is confusing just have a look at the photo below so that you’ll know how it would look.
  10. Roll the tortilla carefully and secure with a toothpick.
  11. Repeat steps 7 to 10 for the rest of the tortillas.

 

 

Note: You can also include some cheese in the wrap if you want to.
