Barabo Mas Huni

 

Don’t you just love a good ‘Mas huni’ for breakfast? While ‘Mashuni’ can be made from so many things like eggplants, drumsticks, ridge gourds and so on, here we have the recipe for one of our favourites, ‘Barabo Mas huni’.

 

Serves: 3

 

Ingredients:

  • 1 medium sized onion
  • 3 curry leaves
  • ¼ lime (or to taste)
  • 1/6 githeyo mirus (or to taste)
  • ¼ tsp. salt (or to taste)
  • ½ cup grated coconut
  • 1 tuna can
  • 1 cup boiled pumpkin (well drained)

 

Instructions:

  1. Slice the onion thinly. Quartering the onion first and then slicing the quarters thinly would make mixing so much easier later on.
  2. Mince the curry leaves.
  3. Place the onion slices in a bowl, squeeze in the lime, add the githeyo mirus (scotch bonnet pepper) and the salt, and using your fingers mix, squash and squeeze the mixture until the onion releases its juices.
  4. Add the grated coconut and curry leaves and mix well again using your fingers.
  5. Then add the tuna and mix well again.
  6. And finally add in the pumpkin, mix well, do a taste test, make the final adjustments and that’s it.
